Sous Chef - Ryan Fernandes
Ryan graduated in Physics, but he enjoyed food and hospitality so much, he enrolled in the Institute of Hotel Management in Goa, India and completed a 3-year course in Hotel Management, Catering Technology and Applied Nutrition.
It gave Ryan lots of knowledge about the whole hospitality industry and an opportunity to compete in the all India Students’ Chef Competitions which was a great experience.
Ryan was selected by the Taj Group of hotels as a Kitchen Management Chef Trainee in their 2 year management program, where he learnt the basics in cuisines such as Indian, Chinese, Italian, French, Thai, and Mediterranean, completing projects and getting the authentic taste of the food from all the regions in India he visited.
After receiving job offers to come to England, Ryan worked in Bath and Bradford-on-Avon, but soon wanted a move back to a large hotel in a vibrant city and that's where his career at the Aztec Hotel started in 2005.
